Pork King Good Smoky Jalapeño & Cheese Chili

Sweater weather called. It wants chili. This simple beef and bean chili gets a smoky, cheesy jalapeño kick from Pork King Good Smoky Jalapeño & Cheese Seasoning. Pick your method: stovetop, slow cooker or Instant Pot.

Makes about 4–5 servings

Ingredients

  • 1 lb lean ground beef
  • 1 small onion, diced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 can kidney beans (15 oz), drained and rinsed
  • 1 can diced tomatoes (14.5 oz), with juices
  • 1 can tomato sauce (8 oz)
  • 1–2 tablespoons (depending on spice preference) of  Pork King Good Smoky Jalapeño & Cheese Seasoning
  • Water or low-sodium beef broth, as directed below
  • Optional toppings: sour cream, shredded cheese or green onion

Use canned beans, not dried beans. Brown the beef and onion first, breaking up the meat; drain excess fat. Ground beef should reach 160°F, measured with a food thermometer. Color alone is not a reliable check.

Stovetop

Stir chili powder, cumin, beans, diced tomatoes with their juices, and tomato sauce into the browned beef and onion. Bring to a simmer, cover and cook gently for 20–25 minutes, stirring occasionally. Add a splash of water or broth if needed. Finish with the seasoning directions below.

Slow cooker

Transfer browned beef and onion to an appropriately sized slow cooker, following its fill-level guidance. Add chili powder, cumin, beans, diced tomatoes with their juices, and tomato sauce. Stir, cover and cook on LOW for 6–8 hours. Finish with the seasoning directions below.

Instant Pot in a 6 quart cooker

Brown beef and onion using Sauté, drain excess fat, then press Cancel. Add 2½ cups low-sodium broth or water and scrape the bottom completely clean. Stir in chili powder and cumin. Layer beans, diced tomatoes with their juices, and tomato sauce over the meat without stirring them in.

Keep contents below the half-full mark. Close and seal according to your model’s instructions. Pressure cook on High for 5 minutes, then let pressure release naturally. Open only after pressure has fully released. Stir and simmer uncovered on Sauté, stirring frequently, until thickened. Finish as directed below.

Allow extra time for pressurizing, natural release and reducing. The liquid quantity is specific to this 6-quart adaptation; follow your model’s manual. Do not reduce it to the stovetop quantity.

Finish and serve

After cooking, stir in 1 tablespoon PKG Smoky Jalapeño & Cheese Seasoning. Taste, then gradually add up to 1 more tablespoon for your preferred flavor and heat. Taste before adding extra salt. Add optional toppings and serve.

Contains milk: the PKG seasoning, plus optional cheese and sour cream toppings.
