Battered Buffalo Cauliflower by @ketobydesign

These battered spicy cauliflower bites are sure to make your taste buds dance for your next side dish!

Ingredients:
- 12 oz bag of cauliflower

- 6 tbs of egg whites OR 2 eggs 

- 1 scoop of unflavored protein powder
- 1 oz (28 grams) of Pork King Good pork rind crumbs, Use the cajun flavor for an extra kick
- 1 tbs of garlic powder

- 1 tbs of onion powder 

- 1/4 tsp of salt

- Avocado Oil for Frying
- 1/2 cup buffalo sauce

Directions:
Microwave or steam cauliflower and set aside.

In a medium sized bowl whisk together eggs, pork rind crumbs, protein powder and dry seasonings.

When the batter is formed, coat the cauliflower by dunking in the egg mixture.

Heat up oil in a skillet (Oil should be about 1/2" deep) then shallow fry the cauliflower.

Continuously flip the veggies as the batter becomes a golden crust.

Once the coating is completely crispy - set pieces aside on a paper towel and pat any excess oil off. In a separate bowl, coat the now fried cauliflower in buffalo sauce. Serve Hot & ENJOY!
