Zoodle Carbonara with Pork Rind Mollica (Paleo, Keto) by Carson Sweezy
Heres what you need for 2 servings (or 1 Italian serving, no judgment :
4 medium Zucchini, turned into zoodles with mandolin or zoodle maker
1 red onion, sliced
4 pieces of bacon
2 egg yolks
2 cloves garlic
1/4 cup nutritional yeast (optional)
1/4 cup Pork King Good pork rind crumbs, toasted
Fresh parsley, finely chopped for garnish
In a large cast-iron skillet or wok cook bacon over medium-low heat.
Meanwhile in a large bowl, whisk together egg yolks, egg, and nutritional yeast. Set aside.
Remove bacon from pan when cooked to desired crispness, and allow to cool before chopping. Keep bacon grease in the pan.
In the bacon grease, saute onion over medium heat until cooked through. Then add garlic.
Add zoodles and saute 2-3 minutes over medium-high heat.
Place hot zucchini mixture, chopped bacon, and half of your toasted pork rind crumbs into egg mixture and combine well.
Top with fresh parsley and remaining pork rind crumbs and enjoy!
