Pork King Good Stupid Hot Mexican Street Corn

Looking for an absolutely easy peasy Taco Tuesday side dish with a kick of spice?  How about our Stupid Hot Mexican street corn?


Stupid Hot MExican Street Corn


Recipe:
1 12 oz bag of frozen corn
1/2 cup mayonnaise
1/3 cup sour cream or Mexican crema
1/2 cup cotija cheese
juice of 1/2 lime
1 tsp salt
1 tsp Chili powder
1 tbsp chopped cilantro
1/2 cup crumbled Stupid Hot Pork King Good pork rinds

To make Dressing:
Stir together mayo, sour cream, lime juice, salt and chili powder.Heat up corn, either by microwaving, or for a bit of extra flavor, sauté the corn in a cast iron pan.Stir together the dressing and corn, and top with the cheese, cilantro and pork rinds.Serve along side you favorite Mexican main dish! (we made ground chicken Nachos using the Pork King Good Taco seasoning!)

Note for those with a not quite Stupid Hot spice tolerance: You can make this recipe with our Smoky Jalepeno Cheese or Nacho Cheddar pork rind flavors to keep things a little more mellow.
