Pretty Piggie Chocolate Mousse Pie ( @on_westhoff_ranch )

Chocolate Pork Rind Crust:

6oz. Pork King Good Unseasoned Pork Rind Crumbs

1/4c. Brown Sugar Substitute, packed. I used @sukrinusa

1/4c. Cocoa powder, unsweetened 

1/8-1/4tsp salt, optional

1/4tsp. Ground Cinnamon

5TB Melted Butter

In a large bowl, combine first 5 ingredients. If you don't want to use the salt, don't. I gave it a little taste and added 1/4tsp salt to my liking. It works with this dessert. Drizzle in melted butter and mix thoroughly. 

Grease a Torte pan with removable bottom. Place on a baking sheet. Press Crumbs on bottom & up sides of Torte pan. Bake at 325 for 15 min. Let cool completely. .

Cream Cheese Mousse Layer:

4oz cream cheese, softened

1/4c butter, softened

1/3c powdered Monkfruit/erythritol Blend by @sonourishedinc 

1/2tsp vanilla

1 1/2cups heavy whipping cream

1pkg @simplydelishnatural Instant chocolate pudding

6oz homemade whipped cream, or sugar-free coolwhip, thawed, (if you're dirty keto)

1-2TB choczero sugarfree chocolate syrup.

In a large bowl, cream together cream cheese and butter. Add in sweetener and vanilla and beat till fluffy. In another bowl beat heavy whipping cream and instant pudding for 2 min. Beat in whipped cream. Yes, beat. Don't fold like normal. It will be too lumpy if you don't beat. Beat this mixture into cream cheese mixture, with the 2 tablespoons on chocolate syrup, until combined. It will be thick!

Spread this over cooled Crust, cover and chill till cold.

Serve with more choczero chocolate syrup on top
