
Crispy Baked Beer Potatoes

Ingredients:
- 1 bag of red baby potatoes, washed and cut in half
- Olive oil, about 2tbs divided
- 1/2 cup Unseasoned Pork Rind Crumbs
- 2Tbs Beer Seasoning
- 1 cup shredded parmesan cheese, plus 2 tbs
Directions:
- Preheat oven to 450 degrees
- Take a large baking dish and add 1tbs of olive oil along the bottom, coating the bottom.
- Add your unseasoned crumbs evenly over the olive oil.
- Sprinkle 1tbs of beer seasoning over the crumbs.
- Evenly sprinkle 1 cup of parm cheese on top.
- Next add your potatoes cut side down directly on top of the cheese.
- In a small bowl add the remainder of the olive oil, 1tbs beer seasoning and parm cheese and mix. Take a brush and coat the tops of the potatoes with the mixture.
- Cover with foil and bake for 30 min.
- Take foil off and continue cooking for an additional 15 minutes.
