Chocolate Dipped Peanut Butter Balls

I grew up eating these peanut butter balls every year around the holidays. My step mom would make batches of these crispy, chocolaty balls and they would disappear at lighting speed. They originally are made with Rice Krispies but our Unseasoned Pork Crumbs make the PERFECT zero carb addition.

Ingredients:

1c natural peanut butter ( I use Crazy Richards )
1c Confectioners sugar ( I use Swerve )
1/2c Unseasoned Pork Rind Crumbs
Directions:
Mix all ingredients together then place in the fridge until completely chilled ( about an hour ). Take mix out of fridge and roll into balls then place BACK in the fridge to set again.
Chocolate Dip:
Heat preferred sugar free chocolate of choice ( I use ChocZero ) over a double boiler and QUICKLY dip the bottom of the balls in the chocolate and then place on parchment paper and place back in the fridge.
Keep PB balls in the fridge and serve cold.
