Cheesecake Ingredients
1 block of cream cheese, softened
1 stick of butter, softened
1 C confectioner sugar
1 tbsp vanilla extract
1/2 C sugar free chocolate chips

Pork Rind Crumbs Coating ingredients
1 C Unseasoned Pork Rind Crumbs
1/2 C Swerve brown sugar
1/2 C Swerve granular sugar
1 tbsp cinnamon

In a medium bowl, combine cream cheese, butter, vanilla, and sugar. Using a hand mixer beat until smooth and evenly combined. Fold in chocolate chips. Refrigerate for 1 hour. Remove and shape the mixture into a large ball, and set to the side. In a medium bowl combine the pork rind crumbs and all other ingredients and stir until well blended. Next roll the cheesecake ball in the pork rind mixture until it’s completely covered. You may have to pat the mixture into the cheese ball with your hands to make it stick. Once it’s covered in the crumbs transfer onto a serving plate and freeze for one hour. You can serve immediately or store in your refrigerator.
